Trinity Oaks Pinot Grigio
Vineyard Information: The grapes for this vintage were harvested from our vineyards in the cool Sacramento Delta Region, Lodi AVA, and Santa Barbara County. Winemaking: In classic Pinot Grigio style, the wine was cold fermented at 50 degrees Fahrenheit to retain the fresh fruity aromas and flavors. No oak aging or malolatic fermentation was used. Tasting Notes:This Pinot Grigio has subtle aromas of citrus, melon, pears and apricot. On the palate, the wine is crisp and fresh, with plenty of juicy flavors, a light note of mineral and refreshing acidity. Trinity Oaks Pinot Grigio is a perfect aperitif or enjoyed with a summer green salad with smoked chicken tossed with a pear vinaigrette.
Trinity Oaks Chardonnay
Vineyard Information: Trinity Oaks 2012 Chardonnay was produced from a blend of 40% coastal grapes (Monterey County), and 60% Sacramento delta and Lodi region grapes. Winemaking: The wine undergoes partial malolactic fermentation to enhance aromas and mouthfeel and is then aged in a combination of French and American oak. Tasting Notes: Complex varietal aromas with citrus and pineapple flavors with a top note of sweet oak. This medium bodies, well-balanced Chardonnay makes an ideal accompaniment to fish and poultry dishes.
Trinity Oaks Cabernet Sauvignon
Vineyard Information: Trinity Oaks Cabernet Sauvignon is vinified from a blend of 60% Lodi grapes and 40% from Monterey growing region. Winemaking: After a 10-day fermentation is stainless tanks, the wine was aged in American and French oak to round out and soften its rich, black cherry and current flavors. Tasting Notes: A fruit forward wine with delicious aromas and flavors of blackberry and black cherry with notes of green olive, cedar, dried herbs and vanilla. Pairs well with braised and roasted meat dishes.
