Le Paradou Viognier

Le Paradou is a project created by Alexandre and Frederic Chaufiere whose family produce some of the most respected wines in the Vertoux at Chateau Pesquie. Sourced from 2 sites whose raw material are quite unique, the wines carry the name of a centuries-old farmhouse, Le Paradou, belonging to the Chaudiere family. The vines range in age from 40-60 years old, and are cultivated in accordance with the laws of the Terra Vitis, an organization that ensures properties respect the environment by stressing the benefits of integrated farming. The Paradou vineyards are all slightly elevated on rather poor soils in order to obtain the freshest and most drinkable wines possible. The Viognier is fermented in tank, and aged for 5 months. The Grenached is fermented in tank and aged for 7 months.

Nuria Altes, like many other your vintners in Spain, comes from a family who has grown grapes for generations. Terra Alta is one of the largest wine growing regions in Cataluyna and one which few are aware. Nuria farms 14 hectares (about 35 acres) of Garnacha Blanca and Negre at 2 sites. Both vineyards were planted over 100 years ago, and many of these vines survive with some younger vines estimated at about 40 years old. The soil is a thin layer of sand over limestone, a very poor soil and low in nutrients. Harvested by hand, the grapes spend an evening in a refrigerated container before fermentation to prevent oxidation. The Granatxa Blanca see a short maceration of 3-4 hours and are fermented in Stainless and aged 4 months in concrete tanks. The Garnatxa Negra is fermented in concrete tanks and aged for 5 months. Rose: Grape: Pinot Noir, with flavors of Strawberry, Cherry and Lemon. The grapes for this wine are grown in Undurraga’s Codigua Estate. Situated along the Maipo river, behind the Leyda Valley. Cool temperatures here create an ideal environment for producing Pinot Noir of delicate colour and fresh acidity, perfect for sparkling rosé. TasteDelicate watermelon pink, and with subtle aromas of cherries, strawberries and flower petals. Persistent, uniform bubbles and zesty acidity provide an uplifting palate. Enjoy Great as an apéritif, or with lightly spicy chicken.
Sparkling: Grape: Chardonnay and Pinot Noir. Color Wine brilliant pale yellow with numerous small bubbles. TasteTaste of sparkling wine fresh, dry, well balanced acidity and light, refreshing aftertaste. Aroma Sparkling wine has a seductive aroma, woven from the notes of apples and quince. Enjoy: wine is perfect as an aperitif, goes well with light meals, snacks, salads, seafood.
